The inner boiler of the TRK-80 and TRK-120 are single-walled, with direct electric heating under the bottom. This direct heat gives speed and can be used for browning as well as for cooking. Cooking in water is also quite possible. The heat of the bottom is measured in several places and is the basis for temperature control. The heating capacity can be easily adjusted so that it is also suitable for thicker products such as mashed potatoes or sauces. The 200 liter boiler is double-walled and heats indirectly.
For steam heating we apply a double wall of laser welded “Thermplate”. Between the very small space between the two stainless steel plates the steam or thermal oil circulates. Not only can a double wall be used for heating, but also for cooling with circulating water or glycol.
The agitator’s drive motor is mounted under the boiler. This drives a robust stainless steel mixing arm with Teflon bottom and sidewall scrapers. The mixing arm is easily removable with a quick coupler. Optionally available with an agitator holder to improve mixing. This technique is adopted from our industrial boilers. Stirring and tumble action improves mixing.
Unique in this class is the electric tilting motor. The kettle can be upright for filling, angled for extra mixing action in tumble mode. And tilt out at 70 cm height in standard 200 liter standard containers.
the water supply can make working with the kettle more efficient. Up to 100 programs can be stored in the optional touchscreen to create a digital cookbook.
